The beginning of Fall begs for soup. Those first cool days and even cooler nights are practically made for curling yourself around a comforting, steaming bowl of goodness. Soups are economical and generally pretty easy to put together. Ever since the kids changed their mind about the goodness of soup a couple of years ago, soup is on the regular Fall/Winter dinner rotation. So here are some of our favorites:

The epitome of autumn soups has to be butternut squash soup. It’s simple, sweet and delicious. Great as a starter of as a light lunch with a salad.
